Truffle Hunting and Extraction
An ancient tradition, in search of the precious and delicious mushroom
“Truffle hunting and extraction” consists of a set of traditional knowledge and practices passed down orally from one generation to the next.
UNESCO recognised this practice in 2021, by the name of “Truffle Hunting and Extraction in Italy: Traditional knowledge and practice.”
Truffle hunters or “tartufai” usually live in rural areas or small villages. Truffle “hunting” is divided into two specific moments: hunting and extraction.
The first one is locating the areas where the plant from whose roots the underground mushroom grows. This step is performed with the help of a specially trained dog. The hunters then use a special spade to extract the truffles without altering the ground surrounding them.
Being able to find a truffle requires a wide range of skills and knowledge about the climate, environment, and vegetation, related to the management of natural ecosystems and the relationship between the dog and the truffle hunter. These notions are passed down orally and reflect the local cultural identity, creating a feeling of solidarity in the truffle hunting community.
This ancient tradition is often associated with popular festivals marking the start and end of the season for hunting the precious mushroom. The practices respect the ecological balance and plant biodiversity, ensuring the seasonal regeneration of the various species.
As far as Lombardy is concerned, the territories of Oltrepò Pavese and Mantua province are included in the recognition.
