Cultura culinaria brianzola: storia, curiosità e ricette

La cucina tipica della Brianza si è mantenuta fedele alla tradizione perché nemica delle sofisticazioni alimentari: essa è fatta di semplicità, sa di paese, utilizza ingredienti poveri ma di sicuro effetto.

 

Pare siano state l’impazienza e la frettolosità dei brianzoli ad aver dato origine ad alcuni piatti tipici della tradizione gastronomica locale.

Tradizioni culinarie che venivano tramandate con religiosa riverenza di madre in figlia, non solo attraverso preziosi ricettari vergati a mano, ricchi d’appunti ed impregnati d’un buon odore di pietanze cucinate a lungo, ma anche e soprattutto con l’esempio e l’esperienza diretta sui fornelli.
Una cultura del cibo, una tradizione conviviale fatta di antichi e rassicuranti riti quotidiani, di lunghe cotture sulla stufa a legna o nella cenere del camino, di ricette semplici scevre dai mille orpelli che spesso oggi, era della stravaganza e dell’abbondanza, nonché dello spreco, appesantiscono ogni manicaretto appiattendone il gusto.

Piatti unici come cazzoula con polenta si dice sarebbero stati inventati per star poco a tavola e dedicare invece tutte le energie al lavoro e ai propri interessi. La maggior parte dei piatti tipici dal minestrone alla brianzola alla busecca nonché la stessa cazzoula bisognano ancor oggi di lunghe cotture a fuoco lento. L’ideale per lo strumento principe di cottura del passato: la stufa a legna in grado di mantenere a lungo il calore e di diffonderlo lentamente.

La preparazione di questi piatti veniva accelerata nella fase iniziale, mettendo tutto nel paiolo, si portava poi ad ebollizione e quindi si prolungava la cottura al fuoco dolce della stufa per tutto il tempo necessario e ancor più. Era uso lasciare minestroni ed intingoli sulla stufa anche quando le faccende della stalla o nei campi richiedevano di uscire di casa. Al ritorno il cibo era a giusta cottura e pronto per essere consumato. Tutto ciò era possibile un tempo quando le verdure e la carne avevano ancora quella tenacia tipica dei prodotti genuini.
