Baked tench in Clusane
In front of the port of Clusane, you can discover one of this area's most delicious delicacies: baked tench.
This fish has a starring role in the gastronomy of Lake Iseo, appearing in many local dishes.
The moderate temperature of the lake water allows for the proliferation of various species, including char, trout, whitefish, bleak and, of course, the famous tench.
According to the ancient lakeside recipe, this dish is served with cheese stuffing, salt and spices, baked exclusively in terracotta dishes.
The town of Clusane celebrates this culinary speciality every year with "La Settimana della Tinca" (Tench Week), which is held in July to teach tourists and locals about the importance of this traditional dish.
Its ties to the landscape and its traditional preparation make baked tench a truly unique product, especially when accompanied by a glass of Brut Franciacorta!
